Summer Berry Galette


During berry season, I love making galettes. I call it “lazy pie” because they’re so super easy and fast to make. Here’s the recipe for this Blue Berry and Blackberry Galette:

1. Thaw premade dough according to directions.
2. Rinse berries of choice, we used blackberries and blueberries. Organic blackberries from a local farmstand are our personal favorite.
3. Once dough is thawed, unroll it and place it in a pie dish.
4. In a bowl, combine berries (2-3 cups), granulated sugar (about 2 tablespoons, but more is optional), and lemon juice of 1/2 lemon.
5. Add your berry combination to the pie crust. Don't spread it into a layer, instead spread it so it is still slightly heaped in the middle.
6. Fold edges of pie dough towards the middle of the pie, but not covering the berries fully. You're just tucking them in :).
7. Once your edges are folded all the way around, lightly brush the folded edge with egg wash. Add coarse sugar for added sweetness and for some fancy-points!
8. Bake the galette according to pie dough instructions, or until the crust is golden brown and the berries bubble slightly. Ours went at 450 for about 15 mins!
9. Let cool and serve, preferably with vanilla ice cream!
