Our Onion Harvest

The gardens are brimming with veggies now. We've had a good yield of onions this year, so we've been in the process of harvesting them and preparing them for storage. If we store them properly, I may be able to get through the winter without adding them to my shopping list. The trick is to let the skins harden first. Leaving the greens on, we'll hang them in a dry, well-ventilated area for about six weeks. After that, we'll remove the greens and hang them in mesh bags in our basement, as they need to be in a cool, dark place for the duration. I'm looking forward to many good meals, and I'm hopeful the mice will not get to them first. Wish us luck.
